Fluffy Gluten Free Pancakes

- 50 g of Schar Mix Pâtisserie - Mix C
- 250 ml of milk or non-dairy milk
- 2 eggs
- 1 pinch/es of salt
- 2 tbsp of caster sugar
- 1/2 tsp of baking powder
- a teaspoon of oil or butter
Beat the eggs in a bowl.
Mix together the flour, salt, sugar.
In a separate bowl, lightly whisk together the milk and egg until you have a smooth and homogeneous mixture.
Let it sit for about 20 minutes.
In a non-stick pan (about 13 cm in diameter), heat a teaspoon of oil or butter.
Pour in a full ladle of batter.
Cook the pancake on both sides until it becomes golden brown.
Keep the ready pancakes warm in a low oven.
Continue until all the batter is used up, stacking one pancake on another.
Serve while still hot sprinkled to taste with honey, maple syrup, jam, melted chocolate and fresh fruit.
