Frittatas with vegetables

- 8 eggs
- 125 ml of water
- 200 g of cooked beans or 1 can
- 200 g of feta cheese
- 3 sundried tomatoes
- 1 small Arabic kousa zucchini
- 1 capsicum yellow or red
- 1 teaspoon olive oil
- Salt and pepper
- Provence herbs or other fresh or dried herbs
Whisk the eggs, the water, the salt and the pepper in a bowl and set aside.
Chop the Arabic kousa and capsicum into dices
Add the cooked beans, the feta cheese, the sundries tomatoes and the herbs.
Preheat a frying pan with the olive oil.
Stir the vegetables for 3 minutes.
Add the egg mixture.
Using a wooden or plastic spoon, gently lift the mixture every minute or so.
Cook for around 5-7 minutes and serve hot.
Serve with your favorite salad.
